Instead it rises using a "sourdough starter," a live, fermented culture of flour and water containing wild Colorado yeasts and bacteria naturally present in the environment. Sourdough is widely considered healthier than conventional bread primarily due long fermentation, improving digestion, nutrient absorption, and blood sugar control. Orsetto utilizes 100% organic wheat. Organic means without the use of synthetic pesticides, herbicides, or artificial fertilizers. The same goes for the sauce, 100% organic tomatoes. This approach emphasizes sustainable farming practices that promote soil health, ecological balance, and nutrient dense food.

Blaise has been cooking pizza 14 years and counting. Through repetition and dedication he has labored to create a pizza of his own, reflecting who he is and where he is from. 5 years ago he started his business and as Orsetto Wood Fired Pizza, he has brought craft-artisan pizza to Colorado Springs. He has made every single pizza since opening, and hopes to remain cooking and refining his craft until he grows old. Chef Blaise is driven to improve the American food system that has been tarnished by price shopping and convenience.
